How it started

Barbs started with Nicc and his Grandma Alder, the queen of Bajan cooking and good vibes. In her kitchen, Nicc learned that great food isn’t just about flavour—it’s about bringing people together. Inspired by her legendary recipes, he created Barbs to share the joy, warmth, and unbeatable taste of Barbados with the world.

Founder Nicc, head chef Amanda Powell and the team is rooted in South East London, we’re a stockpot of talent; bringing together people from the Caribbean and beyond, united by a shared love for exceptional food and heartfelt hospitality. Each one of the Barbs collective brings their unique energy, skills, and stories to the table. Together, we’re more than a team—we’re a family, sharing the essence of Barbados one plate at a time.
