Barbs: The Taste of Sunshine and What’s Next | Celebrating Bajan Cuisine

When I started Barbs, I didn’t just want to serve food—I wanted to build something bigger. For me, Barbs isn’t just a brand; it’s a way to celebrate the richness of Bajan culture, from the vibrant balance of flavours in our food to the warmth and hospitality that’s at the heart of Barbados itself.

What Makes Barbs Different

In the UK, Caribbean food often gets lumped together as “spicy.” But Bajan cuisine? It’s so much more. It’s about balance. It’s bold but never overwhelming, comforting but not heavy, fresh but deeply satisfying. At Barbs, every dish reflects this harmony, from the crunch of our fried chicken to the creamy richness of mac pie and the tangy kick of coleslaw.

But Barbs is more than just the food. It’s about how we make people feel. We want everyone who tries Barbs—whether it’s their first taste of Bajan cuisine or their thousandth—to leave with a little more joy, a little more sunshine in their day.

The Vision for the Future

Right now, Barbs is bringing a slice of Barbados to South East London, but this is just the beginning. The vision is to make Bajan food a familiar part of the UK food scene—something you can find in any city, not tucked away in the “world foods” aisle but front and centre.

We’re starting with delivery, focusing on quality and efficiency, but we’re already dreaming bigger. Imagine walking into a Barbs restaurant, with the smell of freshly fried chicken, the colours of a tropical sunset on the walls, and the sounds of Bajan music filling the air. Imagine finding our sauces and marinades on supermarket shelves, bringing the essence of Barbs to your own kitchen.

And it’s not just about growth—it’s about doing it right. We’re committed to sustainability, reducing food waste, and supporting local suppliers. As we expand, those values will stay at the core of everything we do.

A Movement, Not Just a Meal

The ultimate goal? To create a movement. We want Barbs to be more than a restaurant or a brand. We want it to be a celebration of Caribbean culture and a reminder of how food connects us all.

So, whether you’re grabbing a bite at home, enjoying a meal with friends, or trying Bajan food for the first time, we hope Barbs brings you a taste of sunshine and a reason to smile.
