From Markets to Menus: The Journey to Barbs | Bajan Food in London

Barbs may be new, but this journey started long before we launched. It began in 2016 at Brick Lane and Druid Street Market, where we introduced Londoners to authentic Bajan food. With bold, vibrant flavors inspired by the spirit of Barbados, Barbs has grown from market stalls to menus, bringing a taste of home to everyone.

Setting up in a market stall wasn’t glamorous, but it was raw and real. It was about connecting with people one plate at a time, sharing a piece of my heritage through food. At first, it was the curiosity that drew people in. “What’s Bajan food?” they’d ask, as they eyed the fried chicken or steaming souse. But it didn’t take long for them to come back, hooked on the bold flavours and that balance of tangy, savoury, and just the right kick of spice.
Things really started picking up when we joined KERB Reggae Roast. There was something electric about that event—music pumping, the smell of grilled meats in the air, and people just out to have a good time. We were part of something bigger, bringing the energy and spirit of Caribbean culture to life. Those were long days, but they taught me a lot about what it takes to make people not just eat, but feel something.
Over time, we built a loyal following. People started recognising us for the food, sure, but also for the vibe. The warmth, the passion, the pride in every plate. But there were limits to what we could do at markets. The question became: how do we grow without losing that authenticity? How do we stay true to what made us special while sharing it with more people?

That’s how Barbs was born. It’s a fresh start but rooted in the same values that carried us from Oistin Bay to where we are now. The fried chicken? Still marinated the way we’ve always done it. The mac pie? Still creamy and rich with that Bajan twist. It’s the same spirit, just scaled up for the next chapter.
Barbs is about bringing a taste of Barbados to everyone, whether they’re trying Bajan food for the first time or chasing a bit of home. The journey from those early market days to launching Barbs has been incredible, and we’re just getting started.
